Katie says: “This is kind of a lot of work but it's a nice refreshing drink and you really can taste the hint of ginger. For the cucumber part, we grated it and then muddled it and strained it using a mesh strainer; we didn't do the tea towel/cheesecloth part.”
Ingredients
- 2 oz Empress 1908 Indigo Gin
- 1.5 tsp simple syrup
- 1 tbsp fresh ginger, minced
- 1/2 large cucumber (1.5 oz cucumber juice)

Finely grate the cucumber into a bowl. Strain the pulp and juice through a cheesecloth or a clean tea towel and wring the cucumber juice from the pulp.

Add 1.5 oz cucumber juice, Empress 1908, simple syrup, and minced ginger to a shaker with ice. Shake vigorously.

Pour straight up through a fine mesh cocktail strainer into a Nick & Nora glass.

Garnish with a cucumber wheel.
